Hand-picked in pristine condition, before being foot plunged in open oak fermenters with 20% whole bunch and then cold soaked for 48 hours adding complexity to the aromatics and allowing for natural fermentation to begin. Two picks of Shiraz - one for structure and depth, one for perfume and finesse - underwent individual ferments in open wooden vessels, gently basket pressed and then stored for 10 months into a combination of new (30%) and old French oak.
