2021 Basket Press Chardonnay
Grape Varietal— Chardonnay
This wine has fragrant notes of hazelnut praline, finger limes, lime blossom & nougat. The nose displays excellent depth & abundance of aroma with mineral complexity & a subtle hint of toasted oak. The lime zest is also evident on the palate, along with honeysuckle & hazelnut. Silky length and texture with a very long flavour profile & complex structure from wild yeast, “Surlée” in the barrel & concrete egg with a buttery & lingering finish. Young and interesting contemporary Chardonnay to be enjoyed now or cellared.
The fruit was hand-picked and chilled to 5 degrees then foot stomped & gently pressed into our basket press. Utilising indigenous Krinklewood yeast grown from fruit gathered a few days earlier in the vineyard, the majority was fermented in our three 700l Nomblot fermentation eggs, whilst a portion was fermented in new and used French oak where it also went through malolactic fermentation in both in barrels and in the eggs. The wine was left resting on lees for nine months before blending and bottling.
