An acidity-chasing level of alcohol in a region as warm as the Hunter, yet flavour does not feel compromised. Lightweight, dry and versatile. Jubey lemon oil, apricot pith and dried hay notes sashay along a gentle beam of cedar oak and a core of vanilla cream and cashew.

Grape Varietal— Shiraz

Deep ruby colour, displaying elegant and uplifting notes of red plum, boysenberry & mulberry jam. This classic Hunter Valley Shiraz shows a medium body with soft earthly & savoury notes. The blend of new and used French oak gives this wine beautiful notes of clove and vanilla beans.

The Shiraz fruit was harvested in the cool of the night and came into the winery in pristine condition.
Fermentation was in a combination of small open fermenters which we plunged daily. The wine underwent malolactic fermentation on the skins before being racked into oak barrels, where it matured for 12 months before final blending & bottling. It is a very engaging wine to enjoy now and will develop with further cellaring.
